Rebecca Altmann, head baker at Ndulge Cupcakes in State College, enjoys baking specialty cupcakes because she believes that "everybody enjoys a treat now and then".

Ndulge normally offers one specialty cupcake a week, in addition to 20 to 22 different flavors that are offered daily. Those flavors include a chocolate cupcake, a peanut butter cupcake and a very popular red velvet cupcake.

This coming week Altmann will be creating a Neapolitan cupcake that will include the old fashion chocolate, vanilla and strawberry flavors. Along with this cupcake she is also attempting a Neapolitan shortbread cookie.

Altmann understands that people can have certain food allergies and will never say no when someone asks her to leave out certain ingredients.

"I've gotten orders from people with dairy allergies and gluten allergies and so on, and not a lot of places in town cater to that," she says. "So it really gives us a chance to break into that world and have them tell us what they want."

Altmann began working at Ndulge Cupcakes two years ago after answering an advertisement on the internet. She has been a part of the process from the ground up and it has really let her and the other workers build themselves as a brand and build them to be what they want to be, which to her is pretty simple.

"We want to take over the world one cupcake at a time.
